Okay, I'm actually not really the type of person who likes holidays. In my experience they're way too much hassle. But that's also because we rarely had typical holidays. We usually go to visit our family, and to see all of them takes lots of energy.
I'd say I'd rather visit southern countries, and that ties to the next question. My fondest memories of all the holidays where the ones where we were at the beach with poeple I liked. This might have been my cousins 10 years ago, to some old family friends last year. Another nice holiday was two years ago in Italy. It was just a week but I met a lot of cool people there and had a nice experience from dawn to twilight.

I feel like as it's going now, the next generations will be smaller than current ones. But I don't have any data to back that up. If poorer countries could adapt the luxuries and education of the west they would stray a similar path.
About global warming and fossil fuels: The obvious answer is renewable energies. One step towards that are improving current technologies in new environments, like Tesla is doing with their electric cars. The production of those cars is still a problem, but I believe that in a few years we'd be ready to completely switch to fully electric vehicles everywhere. There are other technologies like sun panels and wind turbines which still could be improved and that are improving on a daily basis to be more efficient. So putting the focus towards that would definitely be a step into the right direction.
Actually we already are ready to switch to electric cars. Companies do have the power to provide affordable electric cars, because batteries do not cost as much as it seems, if you compare normal versions of cars with their electric counterparts. It's another case of big brother controlling the world.
